Ingredients

    15.5 oz Hurst's Red Lentils
    Red Curry Seasoning Packet (Included with Lentils)
    2 Tablespoon Olive Oil
    1 Cup Onion, finely chopped.
    2 Cloves Garlic, chopped
    1 Can tomato Paste (6 oz)
    1 Cup diced potato
    1 Can Coconut milk (14 oz)
    7 cups water

Directions

Rinse Lentils in cold water.
In a large pot over medium high heat, saute onions and garlic with olive oil.
When onion becomes translucent (4-5 minutes) add tomato paste, potatoes, cononut milk and water. Stir periodically until mixtures reaches a boil. Reduce Heat to low , add seasoning packet and simmer miture for 15 to 30 minutues.
