Introduction

This is a type of Johnny Marzetti - simple and inexpensive, I've switched to turkey to lower the fat and calories and I've switched to Splenda to remove some calories and sugars. Ingredients

    Salt - to taste
    Splenda - to taste
    1 pound ground turkey, browned
    1 pound pasta
46 oz can of tomato juice

Directions

Brown turkey and set aside. Boil pasta and strain. Here you have a choice...there's too much pasta for the 46 oz of tomato juice. So you can either add another can of V8 or tomato juice, or you can remove 2-3 cups of pasta and use it for something else. I have kids, so I make homemade mac and cheese with the remaining pasta - or open a jar of spaghetti sauce and have it later in the week. Or you could boil less in the first place : )

Once you have the pasta and turkey ready, just combine it all in the pasta pot, stir and simmer. You want to cook the juice down into a sauce - about 15-25 minutes. I ALWAYS have to taste and re-season this dish...just do it a little at a time so you don't go overboard!
