Introduction

This recipe comes from an old magazine I had lying around, I believe it was "Self". Really tasty and easy to modify!

One good add-in is 5 Kalamata Olives, sliced. I'm not sure how many calories that would add. They are NOT included in the nutritional breakdown here, but if you have them they are really good in this salad.

Also, the feta cheese I used was one serving of the Presidente Fat Free Feta. An easy way to measure a serving is to get the whole block of cheese out of the package, cut into 8 even pieces, and then each piece is one serving :)

Ingredients

    1/2 cup chopped cucumber
    1/2 cup chopped tomato
    1/2 cup chopped red bell pepper
    1/2 cup chopped green bell pepper
    1/2 cup garbanzo beans (chickpeas)
    1/4 of a red onion, sliced thin (or diced if you want)
    1 oz. fat free feta cheese

    2 TBSP red wine vinegar
    1 TSP olive oil

    OPTIONAL- 5 Kalamata Olives

Directions


Chop the cucumber, tomato, peppers, and onion into a big bowl.
Rinse the beans and toss em in.
Add the feta cheese, onions, and olives (if using)

Mix well. Add the oil and vinegar and mix well again. (play around with the oil:vinegar ratio if you'd like. This ratio = tart)

Sometimes I toss in a few pinches of dried oregano, or some black pepper when I'm tossing it.
