You can even make it in a toaster oven and roast some veggies alongside for a full meal that practically cooks itself.I've made it with basil, and dill (not together) instead of rosemary and it was great, so if you don't like or have rosemary feel free to sub something else. Ingredients

Nonstick Cooking Spray
4 oz. skinless chicken breast
1 Laughing Cow light Swiss Cheese wedge
1/4 cup fat free cottage cheese
1/3 cup diced tomato
2 tbsp. fresh rosemary (or whatever other fresh herb you enjoy)
Directions
Preheat oven (or toaster oven) to 350F. Spray a baking dish with nonstick cooking spray.
Cut chicken breast in half and set on baking dish.
In a small bowl, mash together the cheese wedge with the cottage cheese. Add chopped tomatoes and rosemary. (or whichever herb you're using). Mix well.
Stuff the cheese mixture onto one half of the chicken breast and top it with the other half of the breast.
Bake for about 30 minutes, until chicken is cooked.
Serving Size: Makes one serving
