Ingredients

    1 package Maple Link Sausage
    14 lg eggs
    1 8oz pkg shredded cheddar cheese - 2%
    2.5 cups milk
    bread or buns to break up - don't worry too much about the exact number or type - whatever you use, make it 'light' and it will still work with the calorie count in this recipe. I just use the oldest stuff I have in the bread box! This time it was a couple of light hot dog buns, a couple of light sandwich buns, and 4 slices of light wheat bread.

Directions

Fry sausage, cool. Break up bread into small (stuffing sized) pieces and set aside. Slice cooled sausage links into bite sized pieces - scissors work best! Hand whisk eggs in a large bowl. Add sausage pieces and bread, mix. Add milk - milk should make the mix a little soupy. If it seems firm, add a little more milk. Add cheese and mix. Chill overnight. Split the mix between 2 9X13 pans - sprayed with Pam. You can take this opportunity to add peppers, onions, etc to one of the pans if you like. Bake at 350 for 30-45 minutes. It will brown nicely. It should be puffy, but once it settles it will only be about an inch thick. You can make a thicker casserole by using only one pan, but you will need to increase the cooking time considerably.
