Ingredients

1 T olive oil
1 onion, finely chopped
1 lb. lean ground beef (93% lean or better)
5 oz. frozen peas and carrots
1 jar Heinz Savory Brown Gravy (small jar)
1/2 t. salt
1/2 t. pepper
Mashed Potato Topping:
5 Idaho potatoes, peeled, cooked til tender
2 T butter substitute
1/2 C milk
Directions
Preheat oven to 375 degrees. Peel potatoes, cut into half inch slices and put on to boil. While potatoes are boiling, saute onions in oil
in a large skillet until tender. Add ground beef, cooking until browned. Add frozen peas/carrots and gravy to beef. Stir, reduce heat, cover and cook until vegetables are heated through.
While beef mixture is simmering, prepare mashed potatoes. After potatoes are tender, remove from heat and drain of water. Return to pot and add butter substitute. Using a potato masher, mash until desired texture is achieved. Stir in milk gradually, until desired consistency is achieved.
Pour beef mixture into a 9 x 9 casserole dish that has been sprayed with a non-stick spray. Spread mashed potatoes on top of beef. Sprinkle cheddar cheese over top and bake until cheese and potatoes are golden.
Delicious served with warm crusty bread, a salad, and a glass of red wine!
