Ingredients

    1.25 Pound Extra Lean Ground Beef
    4 portions of Chef Meg's Mole Sauce
    .5 cup fine diced onions
    ground cayenne pepper

    1 can Sweet Corn
    1 can Kuner's Southwestern Black Beans
    .5 can petite diced tomatoes
    ground cumin
    3 sticks Sargento's Colby/Jack snack sticks

    .5 cup Sargento's Shredded Mexican Blend Cheese
    .5 cup slice pickled jalapeño peppers
    .5 cup shredded Mozzarella Cheese

Directions

Preheat oven to 350º.

Brown ground beef. While meat is browning, finely diced onions. When meat is cooked, combine it with raw onions and mole sauce. Set aside.

In bottom of 3" deep oval casserole pour small amount of juice from diced tomatoes. Top with 1 tortilla. Top tortilla with half can each black beans and sweet corn. Sprinkle with half cup of diced tomatoes, sprinkle of ground cumin and 1.5 snack cheese stick cut in small pieces. Top with another tortilla, press to firm.

Top second tortilla with beef/onion/mole sauce mixture. Sprinkle with ground cayenne pepper (optional). Top with third tortilla. Press to firm.

Top third tortilla with remaining black beans, corn, half cup diced tomatoes, chopped cheese sticks. Sprinkle with ground cumin.

Top with Mexican Blend cheese, then half cup sliced jalapeños, and mozzarella. Bake until heated through.
