    1 pound of chicken breast, no skin
    1 Cup, dry, white rice
    1 Can Cream of Chicken soup
    2 (4oz) Cans Diced Green Chilies
    1 Medium onion, diced
    1 Dry cup (4 oz) Shredded Sharp Cheddar Cheese, divided
    3 Cups of Water


Boil Chicken in water with salt until done.
Remove chicken to plate and shred.
Ensure 2.75 cups of broth by adding water as necessary.
Put 2 cups of water into pot. Add onion and dry rice. Cook until rice is fluffy.
When rice is done, add Cream of Chicken Soup, Diced Green Chilies, shredded Chicken and 1/2 cheese. Mix until thoroughly blended, adding broth as necessary for a smooth texture.
Place mixture in a 7' x 11" cassarole dish, cover with aluminum foil and bake at 350 degrees for 40 minutes.
Remove from oven and switch oven to broil. Remove foil from dish and sprinle with remaining cheese as evenly as possible.
Insert cassarole dish in oven and broil for 5-10 minutes or until cheese is completely melted and just starting to turn brown.
Remove from oven and let stand for 10 minutes

Makes nine servings 2.33" x 3.67"
