Introduction

Ingredients

In food processor:
grate 3 small zucchini (approx. 2 cup)
2 carrots (approx 1 cup)
1 large handful of kale (approx 1 cup)
2 beaten eggs
1/2 c. breadcrumbs
1/4 c. grated parmesan (optional).
salt (to taste)
garlic powder (also to taste).
Directions
In food processor:
grate 3 small zucchini
2 carrots
1 large handful of kale
salt zucchini and set aside in colander so some of the water can drip off. before using, squeeze more water out.
Mix 2 beaten eggs and 1/2 c. breadcrumbs (or eye it, use what you need), along with 1/4 grated parmesan (optional). Add in some salt (to taste) and garlic powder (also to taste). Combine with veggies. Shape into patties (4 for a main dish, these will be large or smaller ones for a side dish). Pan fry until lightly browned on the outside. Top with a slice of cheese, if desired.
