Introduction

Packed with veggies and protein from the quinoa. Makes a great side dish. I like it for a mid-afternoon snack. Packed with veggies and protein from the quinoa. Makes a great side dish. I like it for a mid-afternoon snack.
Number of Servings: 10

Ingredients

    1 C quinoa
    2 C water
    1 1/2 C cabbage, shredded
    1 carrot, shredded
    1/3 C red onion, chopped
    1 red pepper, diced
    1/2 C cilantro, chopped
    1/2 C golden raisins
    1 lemon, juiced
    1/4 C rice vinegar
    2 t olive oil
    1 t curry powder
    1 t salt

Directions

Prepare quinoa, allow to cool when done.
While quinoa is simmering, chop all vegetables and combine in a large bowl. Add in raisins.
After quinoa has cooled, add to the vegetable mixture.
In a small dish mix lemon juice, rice vinegar, curry powder, salt and olive oil. Mix well. Pour over quinoa veggie mixture. Toss well.

Serving Size: 1 cup
