Ingredients

•3 cups cooked chicken breast, chopped into bite-sized pieces
•15 oz FiberWise Penne Pasta
•1 T olive oil
•1 whole White Onion, Diced
•6 cloves Garlic, Sliced Thinly
•1 can Diced Tomatoes (28 Oz. Size), Partly Drained
•12 leaves Basil, minced
•1 whole Lemon, Juiced
•1 Tablespoon Dried Parsley
•¾ cups Half & Half
•4 ounces Goat Cheese
Directions
Cook the pasta in salted water until al dente and set aside.
Add the olive oil to the pan and cook the onion and garlic until over medium-high heat until soft, about 5 minutes.
Add the partly-drained tomatoes, the minced basil, the lemon juice, and the parsley. Bring the mixture to a boil, then lower the heat and simmer for 10 minutes.
8. Add the half & half and chicken pieces; stir to coat.
9. Add the goat cheese and stir over low heat until melted.
10. Mix the cooked pasta with the sauce, and serve
