Ingredients

    1 lb extra lean ground beef
    1 onion chopped
    2 carrots sliced
    2 celery stalks sliced
    1 28 oz can diced tomatoes
    1 can tomato soup
    1 pkg beef broth
    3/4 cup pearl barley
    4 c water

Directions

saute beef and onions. Drain off fat. Add carrots and celery. Saute a bit more. Put in lg pot and add remaining ingredients. Bring to a boil. Turn down and heat and simmer for 1 hr

    Very good. I used ground turkey breast instead of ground beef for nutritional reasons. I sauted some garlic with the onions and meat. Also I added green bell peppers in with the carrots and added the celery a little later to allow for a crisp vegetable. Good soup. - 5/6/11
