    2 lbs. chicken breast
    3 Just Perfect sweet italian turkey sausage
    1/2 large onion, diced
    1/2 cup carrots, shredded
    2 stalks of celery, sliced
    2 cloves of garlic, minced
    8-10 cups Emeril's chicken stock
    1 can diced tomatos
    1/2 tsp ground fennel
    1/2 cup Trader Joe's Brown Rice Medley, uncooked
    salt and pepper to taste


1. spray a crockpot with cooking spray. Layer on the bottom the chicken breast, turkey cut into bite sized pieces, and all of the veggies except the diced tomatoes. Add the chicken stock and cook on low for 7 hours.
2. Once 7 hours has passed take out the chicken and dice it or shred it. Put it back in and add the tomatoes, rice, salt and pepper to taste, and the fennel. Continue to cook another 2 hours.
3. Serve with bread, roll, or cornbread.

8 Servings = 3 WW points per serving
