Number of Servings: 4

Ingredients

    1/2 pound dried pasta
    1 14.5 ounce can whole tomatoes, incl juice
    1 14.5 ounce can stewed tomatoes, incl juice
    4 cups fresh spinach
    4 ounces 93% lean ground beef
    2 Tbsp sugar
    S&P to taste

Directions

Cook pasta according to package directions. Just before draining, add spinach directly to the pot, and drain pasta/spinach together. Reserve some cooking liquid (1/4 c max).

While pasta is cooking, brown ground beef (no oil needed), and use kitchen shears to cut tomatoes (can do this in the can).

Return pasta/spinach to hot pot, add all other ingredients. It will be a little soupy at first. Cook on low until the "sauce" reduces down to your satisfaction. Season to taste (I like LOTS of fresh black pepper)

Optional: top w/ shredded parmesan (calories not included)

Serving Size: Makes about 4 1.5 cup servings
