Ingredients

1 onion chopped
3 cloves garlic chopped
1 cup shiitake mushrooms chopped
1 tbsp olive oil
4 cups broccoli
1 cup red pepper chunks
4 cups vegetable stock
1 tsp Braggs
1/2 tsp tarragon
1/4 tsp thyme
Directions
Saute onion, garlic and mushrooms in oil. Add all other ingredients and bring to a boil. Reduce heat and simmer 15 minutes. For a thicker soup, blend half.
