Ingredients

    5 cups vegetable stock
    1/8 box catelli healthy harvest whole wheat spaghetti
    1 pkg tofu cubed
    1 cup snow peas
    1 cup carrots grated
    1 cup mushrooms (I prefer shiitake or cremini) sliced
    1/2 tsp chili garlic sauce
    1/4 cup green onion
    2 tbsp lime juice
    1 tbsp fresh ginger grated
    2 tsp Braggs All purpose soy seasoning

Directions

Bring stock to a boil, add spaghetti and cook 6 minutes. Add tofu, peas, carrots, and mushrooms, and garlic sauce and cook 2 minutes. Remove from heat and add remaining ingredients. Serve immediately garnished with fresh parsley if desired.
