Introduction

Ingredients

    1 package of pork chops, with bone in (about 4 chops)
    1 small container of low sodium stock-beef or chicken
    1/2 cup sun dried tomatoes chopped
    1 tbsp of flour
    1 tbsp of butter
    1 tbsp olive oil
    several sprigs of fresh thyme, leaves stripped from stem
    white wine-optional

Directions

Heat frying pan on stovetop over high heat. Add olive oil to coat bottom of pan and then immediately add the pork chops. Sear the chops for several minutes on each side to brown. Chops should release easily from pan or allow another minute to cook. Remove pork chops from pan and set aside in a bowl to rest. Lower heat and add butter to the pan. Add flour to melted butter and cook mixture until it browns (about the color of peanut butter). Slowly stir in stock, using a fork/whisk to blend the roux (flour/butter) into the stock. Add the sundried tomatoes and thyme. Cover with lid (or tented foil) and allow sauce to thicken. If sauce becomes too thick, add more stock or white wine. Add pork chops back to pan (along with juices from the resting bowl) and cover to finish cooking--about 15 minutes, depending on thickness of chops.
