Ingredients
-
1/2 c ROOM TEMP (liquic) Coconut Oil, Spectrum,
1/2 c Hershey cocoa powder, unsweetened, (Any will do, just ck carb and sugar and get one that has none or close to 0)
1/4 macadamia nuts, dry roasted, Mauna Loa, (some I kept whole some I chopped up)
Liquid Stevia (I use 1 dropper full of plain and 1 dropper full of chocolate flavor per 1/2 cup of oil)
Directions
Start by getting the oil at room temp but still liquid. (If you live in AZ like I do, it may always be in liquid form during spring and summer... ha ha). Warming it in micro and letting it sit for a while helps.
Then mix the stevia into the oil with a wisk first.
Measure your cocoa powder into a sifter. And alternate sifting and wisking till all powder is blended.
If you have candy trays (save those Micheals coupons and pick up a 10pk for a few bucks) fill your candy trays with the mac nuts. Then using a tablespoon scoop out chocolate from bowl and ever so carefully, fill the candy trays.
I can fit 3 trays on a very large (think costco) cookie sheet. Freeze for 10 min and now you have a sugar free/almost carb free treat.
If you don't have candy trays, you can use ice cube trays (don't fill all the way as it would be really hard to pop a whole ice cube frozen and chew). Or sprinkle the chopped mac nuts on a plate with parchment paper and pour chocolate over, freeze and break into peices.
Serving Size: I filled 33 candy sections. 1/2 to 1tbl size
