Number of Servings: 4

Ingredients

    1 pound ground buffalo/bison
    1 large organic egg
    1/4 cup bread crumbs
    3 tsp. Worcestershire Sauce
    2 tsp. Dijon Mustard
    1/2 onion, diced
    1/2 cup fresh mushroom pieces
    1 tsp minced garlic
    1/4 cup grated parmesan cheese
    dashes of salt and pepper

Directions

Preheat oven at 350 degrees.

In a pan, sautee onion, garlic and mushroom in non-fat cooking spray. Cook until onions are clear.

In a bowl, combine remaining ingredients. Add cooked onion, garlic and mushrooms. In four seperate mini-souffle dishes, mound the buffalo mixture into loaves in each dish.

Cook in the oven for 30-40 minutes or until the meat reaches 140 degrees on a meat thermometer.

Serve in the souffle dishes, or if you prefer, carefully remove the meatloaves from each dish and use the drippings to make a simple sauce/gravy.
