Ingredients

    1 lb. ground beef, lean
    2 T. homemade taco seasoning
    1 cup low-sodium fat-free chicken broth
    1 cup water
    2 cups minute brown rice
    1 can black beans
    1/2 onion, chopped
    1/2 green pepper, chopped
    (Toppings you like: not included in nutrition info.)

Directions

Brown meat and onion together. Add taco seasoning, broth and water. Bring mixture to a boil. Add rice and beans. Cover. Simmer on low heat 8-10 min., sirring occasionally. Serve hot with your choice of taco toppings.

Serving Size: makes 9 - 1/2 cup servings
