1 1/2 Cup Sugar
1 Teaspoon Vanilla
3 Large Eggs
1 Teaspoon Salt
2 Teaspoons Cinnamon
2 1/2 Cups Flour
1 1/4 Cups Milk
1/2 Teaspoon Baking Soda
1 Small Box Instant Vanilla Pudding
1 Cup Vegetable Oil
1/2 Teaspoon baking powder
1/2 Cup Chopped Nuts (Optional)
1 Cup Rasins (Optional)
Directions
Heat oven to 325.
Combine sugar, vanilla, eggs, salt and cinnamon in large bowl.
Add flour, milk, baking soda, pudding, oil, baking powder (and nuts and raisins if desired. OMG...to die for).
Mix well.
Grease 2 large loaf pans and sprinkle a cinnamon/sugar mixture on bottom and sides of pan.
Pour batter into loaf pans, using half the mixture for each.
Sprinkle more of a cinnamon/sugar mixture over the top.
Bake at 325 for around 50 minutes. It can sometimes be 45 minutes or even 65 minutes. When you check for firmness, please note: IT WILL BE MOIST and that's GOOD.
Best served warm with butter. Tastes great the next day, too.
