Ingredients

1 tsp ground cumin
2 large cloves garlic
1/4 cup packed fresh cilantro leaves
2 Tbls Egg substitute
2 Tbls Panko Bread crumbs( or comparable bread crumb)
1 15oz can black beans- well rinsed and drained
1/4 cup fat free mayo
2 teas fresh lime juice
1/2 teas mild tobasco( the green one- unless you LIKE hot!)
Directions
I make this in a big mortar and pestle and grind the cumin, cilantro and garlic into a paste- but you can finely chop everything- or blend it smooth it that's easier. Once those 3 ingrediants are smooth- I add the egg substitute and stir to get all the paste out of the crevices of the mortar. Then add the black beans and bread crumbs and with a fork mash into a loose paste. I divide the paste into 4 equal servings on a plate and chill until ready to cook( but at least 15 or 20 minutes)
Meanwhile mix mayo, lime and tobasso and set aside.
WHen ready to serve- In a non-stick pan sprinkle a little corn meal - spray with pam and place patties into pan. Cook 3-4 min per side over med high until a light crispy coating forms( try to tuen only once to prevent breaking.
Warm the salsa( you should have a smooth style rather than a chunky one) PLace on the bottom of a watm salad plate- Place 2 patties on each plate then drizzle with aioli and yum it down!
Serving Size: makes 4 patties- a serving = 2 patties
