Introduction

Very simple and moist cake, needs no icing. Always use a glass cake pan as the rhubarb will turn a metal one black. Very simple and moist cake, needs no icing. Always use a glass cake pan as the rhubarb will turn a metal one black.

Ingredients

    .5 cup shortening
    1.5 cups sugar
    1 egg
    1 tsp soda in 1 cup buttermilk
    2 cups flour
    2 cups rhubarb
    1 cup strawberries

Directions

Heat oven to 350°, spray 9"x13" glass cake pan with Pam.
Chop rhubarb and strawberries, set aside.
Cream shortening with sugar, add egg. Stir soda into buttermilk, add alternately with flour to shortening/sugar mixture. Add fruit, pour into prepared pan.
Bake 45 minutes or until done.
