Ingredients

4 chicken breasts
fresh spinach
baby bella mushrooms, sliced
Veggie Shreds Mozzarella Flavor
1/2 cup Newman's Own Balsamic Vinaigrette
Sea salt (from a grinder)
Ground black pepper
Spritz of olive oil spray
Directions
Preheat oven to 350 degrees
Spray olive oil spray (or use a thin coatind of olive oil) on the bottom and sides of an 8x8 baking dish
Coat the bottom of the dish with fresh spinach.
Lay the four chicken breast on top of the spinach.
Salt & pepper the chicken breasts.
Layer the baby bella portabella mushrooms on top of the chicken.
Pour balasamic vinaigrette over mushroom/chicken/spinach layers.
Sprinkle the Veggie Shreds over the mushrooms.
Bake in oven for 40 minutes.
Serve along or with rice or pasta or vegetables.
