Introduction

Ingredients

    1 package ground turkey (~340 grams)
    1 onion, chopped
    1 clove garlic, minced
    1/2 tbsp paprika, sweet
    1/2 cup chopped roasted red pepper
    1/4 cup dry bread crumbs
    1 egg
    1 bottle tomato pasta sauce (Catelli chunky tomato and basil or similar)
    1/2 tsp Worchestershire sauce
    1 cup basmati rice (uncooked)
    3 threads saffron

Directions

In a large bowl, combine turkey, half the chopped onions, half the garlic, 1/4 cup of the roasted red peppers, bread crumbs, and egg. Mix turkey until well combined and set aside. In a large pot on medium, heat oil and saute onions until transparent. Add all remaining ingredients and bring to a simmer. With slightly damp hands form meatballs, approximately 2 tbsp in size. Gently drop meatballs into simmering sauce until all turkey is finished. Cover pot and let simmer on low for 1 hour or until meatballs are cooked through.
Make rice following package directions. Add saffron threads to boiling water before adding rice.

Serving Size: Makes 15 1" diam meatballs (approx 2 tbspn meat/meatball). 1 serving is one meatball.
