Introduction
In San Fran there is a famous bakery called Schmidt's. There strudel has literally been featured on the TV Show "The Best Ting I ever Ate" The fruit edition. Their version comes in at almost 900 calories! And a whopping 50 grams fat! In this one I took their idea of phyllo crusts and ran with it. This is a HEALTHY version that is loaded with good for you apples and cinnamon. Best of all- my version has just a tad over 250 cals and only 2 grams of fat. Each BIG portion also provides almost 7 grams of fiber and 6 grams of protein! Not Bad for something that tastes SO DARN GOOD! In San Fran there is a famous bakery called Schmidt's. Ingredients

1/2 cup ground cinnamon
1/2 cup splenda
1/2 cup brown suger blend splenda
6-8 large grannysmith apples- peeled, cored, and thinly sliced( you need between 12-13 cups total)
1 cup fat free sour cream
1 cup fat free plain or vanilla greek yogurt( I use Fage 0 brand)
2 teas vanilla
5 Tbls AP flour ( sifted)
pinch salt
1 Tbls raw sugar
1 Tbls real Brown sugar
Butter flavor cooking spray
.5 cup raisins
.5 cup dark or golden rum.
Directions
PLace raisins in a microwave safe cup with 1/2 cup dark or gold rum. Microwave about 2 minutes until raisins plump and absorb most of the rum. Set aside.
In a bowl mix sour cream, yogurt,2 teas vanilla, 6 heaping Tbls, of the cinnamon splenda mix, and the flour- Stir well into a creamy paste. Set aside.
Peel and core apples and thinly slice them.
In a 9x13 baking dish -spray with butter flavor Pam- place one sheet Phyllo in pan.Spray the sheet with cooking spray then LIGHTLY sprinkle with remaining cinnamon splenda mix. Place another sheet of Phyllo and repeat process until you have 4 sheets on the bottom. Place the apples on the phyllo and layer them so they lay as flat as possible. drain the un absorbed rum into the yogurt- sour cream mix and mix well. Sprinkle the raisins over the apples then smear the yogurt- sour cream mix over all as evenly as possible.
place a sheet of phyllo over apples and spray with Pam and lightly dust with remaining splenda-cinnamon mix- do this until you have 4 sheets on top. *** you won't use all the cinnamon mixture- save the rest for wonderful cinnamon toast! When you have 4 sheet of Phyllo- spray the top with Pam and sprinkle the raw sugar and real brown sugar over the top.
Bake at 350 until golden brown.( 45-55 minutes depending on your oven and the altitude).
If you like serve hot with Fat free vanilla yogurt.

*** If you're not a cinnamon freak like me - you can use half the required cinnamon in the cinnamin splenda mix- the apples will shine more.
*** also Grannysmith apples have a tart taste and keep their firm texture when cooking( I.E. they don;t break down into applesauce when baked- so that's why I love them. You can use different kinds of apples- Red or golden delicious apples will give you a sweeter taste and softer texture. Of you can even mix different varieties of apple.
*** I also love the sharp taste of cheese with apples so if you're a cheese-holic- try adding some grated extra sharp cheddar ontop of the sourcream yogurt smear! I've don this with plenty of apples pies and cobblers and it always is a big hit!
