Introduction

I was trying to duplicate the Noodles & Co. pesto pasta that I truly love. Pretty close, but I think it all hinges on their pesto. This is a very quick and easy recipe. Ingredients

    1 box Penne Rigate
    8 oz. sliced mushrooms
    1/3 cup pesto sauce (such as Digiorno)
    2 T. olive oil
    8 oz. fully cooked grilled chicken breast strips

Directions

Boil water and cook pasta as directed.
Heat a skiller and saute mushrooms in olive oil. When softened, add chicken just to warm.

Drain pasta and add mushrooms, chicken, and pesto sauce to pasta pot.

Stir and serve. Top with parmesan cheese if desired (not in nutritionals).
