Introduction

This is an incredibly light and lucious salad. I recommend seasoning the salmon according to your own tastes. My husband likes to grill the salmon on a Weber Pot, but whaterever your method be sure not to overcook the salmon. You could even add some sliced strawberries, blueberries or peaches to the salad. Be sure to account for the extra calories in the fruit. I like to have my dressing on the side and dip the tines of my fork in the dressing. Ingredients

    5 oz Salmon Filet, grilled
    1/4 cup Red Onion, raw, diced
    1/4 cup Red Bell Peppers, raw, sliced small
    1/4 cup Jicama, raw, julienne
    1/4 cup Carrots, raw, shredded
    3 cups Organic Baby Spring Greens, washed, trimmed
    Trader Joe's Cilantro Salad Dressing, 2 tbsp (on the side)

Directions

Season the salmon according to your own tastes (I prefer them skinless). If you drizzle with olive oil, account for the calories, etc. If not, spray each side of the filet with a small amount of olive oil.

Place the salmon fillets on the hottest part of the grill for about 5 to 10 minutes on each side, or until desired doneness. Do not overcook, salmon should be pink in center.

While filet is cooking prepare vegetables. Arrange veggies on a plate; place piping hot salmon on top of the veggies. Serve salad dressing on the side.
