Ingredients

    1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
    1 2/3 cups hot water
    1 1/2 lb. lean ground beef
    1 large red pepper, chopped
    1 can (14 oz.) stewed tomatoes, undrained
    1/2 cup ketchup
    1/4 cup Kraft Catalina Dressing
    1 Tbsp. chili powder

Directions

Mix stuffing mix and hot water just until moistened; set aside. Meanwhile, brown meat in large skillet; drain.

Add peppers, tomatoes with their liquid, ketchup, dressing and chili powder to skillet. Bring to boil. Reduce heat to medium-low; cover. Simmer 5 min. or until peppers are crisp-tender.

Top with prepared stuffing. Cover; simmer 3 mins

Makes 6 servings, 1 1/3 cup each.

Substitute: Use any vegetable your family likes instead of the pepper. Try 2 cups chopped carrots or zucchini.
