Introduction

Boneless, skinless chicken pureed with tofu and egg, rolled in seasoned breadcrumbs. Easy for the little ones to chew, great flavor with that familiar fast food chicken nugget texture, and excellent nutrition! Ingredients

    1 lb boneless skinless chicken, pureed in food processor
    1/4 block extra firm tofu, pureed
    1 egg, pureed
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/2 tsp salt
    pinch of pepper
    1/2 c italian bread crumbs
    1 Tbsp olive oil, extra light

Directions

Puree all ingredients except for breadcrumbs and oil. Form into a log shape on piece of plastic wrap, wrap tightly and refrigerate about 1 hour. Slice meat mixture (will be very soft and pliable) into desired size and shape, and roll in breadcrumbs before sauteeing in the olive oil over medium heat, approximately 2 minutes on each side.

Serving Size: Makes approximately 40 1/2 ounce sized nuggets

    I had to use more than 1 Tbsp of oil to fry them, but they were really good and my kids gobbled them up. - 5/19/11
