Ingredients
-
3 oz Low Fat Cream Cheese
3 large eggs
3 tsp Whey Low
1/8 tsp Cream of Tartar
1/8 tsp sea salt
Directions
Preheat oven to 300 degrees.
Separate the eggs.
Get out your electric mixer.
In a bowl, whip the egg whites and cream of tartar together until the egg whites are stiff. (Use a larger bowl for this mixture since you will be folding the yolk mixture into this one.)
In another smaller bowl combine the Whey Low, salt, and cream cheese and the yolks. Use an electric mixer to combine the ingredients together.
If you're using the same beaters from your electric mixer for both, be sure to mix the egg whites first and then the yolk mixture.
Using a spatula, gradually fold the egg yolk mixture into the white mixture. Be careful not to break down the whites.
Spray muffin or pop-over pan with non-stick spray and spoon in the mixture, making 6.
Bake for 30 minutes. Let your Oopsie Rolls cool in the pan for a few minutes. Then remove the rolls from the pan to a cooling rack and allow them to thouroughly cool.
Store them in a ziplock bag to keep them from drying out.
