Introduction
This is a healthy, high protein, low calorie moist muffin. This was adapted from DUCATI77's Protein Whole Wheat Blueberry Muffins. This turned out to be moist but a bit lower in sugar for my taste. Also, hubby thought it needed more banana flavor. Next time, I would up the brown sugar to 1/2 cup packed and add 1 more mashed banana and possibly 1 tbsp olive oil to make more moist. Ingredients

1/2 cup AP flour
1/2 white whole wheat flour
2 scoops Proventive Harmonized vanilla protein
1 tsp baking soda
1 cup old fashioned oats, ground
1/4 cup brown sugar, packed
1/4 cup splenda
1/2 tsp salt
1.5 tsp cinnamon
2 medium bananas, mashed
2 egg whites
1/2 cup water
1 1/2 cup fresh blueberries
Topping:
1 tsp brown sugar packed
7 walnuts, chopped
1 tsp water
Directions
Preheat 350F
Prepare a muffin tin - spray with non-stick spray then dust with AP flour.
Mix all dry ingredients with a wisk in a medium bowl until well blended.
Mix all wet ingredients together.
Mix dry ingredients into wet ingredients until just blended. Do not over mix.
Fold in blueberries then pour into muffin tins.
In a small bowl, mix brown sugar, walnuts and water. Top muffins then place into oven.
Bake for approximately 20-21 minutes.
Serving Size: 13 regular size muffins
