Ingredients

The cumin seed is actually just cumin, found in the spice section of the grocery store. The garlic is actually minced garlic. The beer doesn't have to be Guinness, any dark beer will do. the cheese is just for topping.
Directions
Brown the meat and stir to break up the pieces.
Add the onion, green bell pepper, garlic, chili powder, Essence, salt, cumin, and cayenne, and cook, stirring, until soft, about 4 minutes. Put the whole tomatoes in a large mixing bowl and squeeze them with your hands to break them into pieces.
Add the squeezed tomatoes and their juices, the tomato paste, sugar, and beer to the pot.
Stir well and bring to a boil.
Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally.
Serving Size: makes 10 1-cup servings.
