Ingredients

1 -2 TbsChopped Mushroom
1-2 Tbs Chopped Onion
Cooking Ppray
Water
2 egg whites with 1-2 Tbs H2O beaten with a fork until frothy and semi stiff
Hard Parmesan Cheese- (Use a carrot peeler to make 2-3 THIN curled strips)
Fresh Ground Pepper
1/4 Orange sliced and 2-3 slices of a plum Tomato as garnish for minimal calories and to fill out the plate.
Directions
Saute the onion and mushrooms in a small omlette pan sprayed with cooking spray. Add water by the tsp as needed to keep things soft and from sticking.
Pour beaten egg whites over the sauteed vegetables. Gently fold. Add a few tsps H2O and cover while it cooks a few minutes. Once set shred a few curls of Parmesan cheese on top and add fresh ground pepper to taste. Add a few more drops H2O to set. Egg will puff up but deflate some what as you loosen from pan. Add slices of orange and tomato for color and taste.
ADD ONS:
*Fresh Spinach cooked with the onion and mushroom, or serve souffle on a bed of spinach cooked or raw.
*This is a nice thing to serve in addition to 1/2 cup of greek yogurt and a few fresh berries.
*1 slice Rudi's Gluten Free bread toasted to boost calories if desired or needed.
