Introduction

Delicious, moist cake that is rich and velvety. Delicious, moist cake that is rich and velvety.
Number of Servings: 14

Ingredients

    200g Lindt chocolate 70%
    250g unsalted butter
    1 1/2 cups black coffee
    2 cups of caster sugar
    1 1/2 cups self-raising flour
    1/4 cup cocoa
    2 eggs
    2 teaspoons of vanilla

    For icing
    100g Lindt chocolate 50% or 70% (I use Greens Mayan dark chocolate for frosting as it adds a nice orange twist)
    100g butter

Directions

Melt butter in a pan, stir in coffee then chocolate and sugar. Do not let it boil. Once combined allow to cool slightly and transfer into your mixing bowl.
Sift flour and cocoa and stir into the chocolate mixture in 3 batches. Once beaten in add eggs one at a time and then vanilla. Beat well.
Pour into a greased and lined 20cm springform cake tin. Bake in a slow oven for 1 1/2 hours. Let cool.
Melt icing chocolate and butter. Once melted allow to cool to room temperature and then then beat with a wooden spoon until thick and spreadable.
