Introduction

Blackened sweet corn and ramps straight from the midwest bring this simple recipe alive. I added black eyed peas for protein, but white beans or garbanzos would be great too. Ingredients

    Makes 2 servings

    1 Ear of sweet corn, medium
    1 bunch of ramps, cleaned and diced (greens optional)
    0.6 cups Black Eyed Peas
    1 tbsp. olive oil
    salt and pepper to taste

Directions

Remove corn from the cob and blacken in a dry pan or on the grill. Clean and dice the ramps while your corn cooks. I added the greens (chopped) for extra flavor, but they can be easily omitted. Add the ramps and beans to the corn with olive oil and salt and pepper. Cook on low for a few minutes until all ingredients are heated together.

Makes 2 servings and can be served hot or cold. For variations, add diced cherry tomatoes, asparagus, or other in-season vegetables!
