Ingredients

    2 cups broccoli - blanched
    1 med onion chopped - saute in garlic seasoning
    1.5 sm containers mushrooms - sliced & sauted in garlic
    4 oz. roasted red peppers - sliced
    1 4 oz can diced chiles
    Egg Mixture:
    12 eggs
    1/2 c plain soy milk
    1/4 c. daiya moz cheese
    2 tsp salt
    pepper
    cheyanne - optional

Directions

prep veggies and pour into a 9x12 sprayed casserole dish. Pour egg mixture over veggies and bake for 30-35 minutes. Sprinkle more cheese on top and bake 5 minutes longer.
