Introduction

I made these in an attempt to make the previous recipe healthier. I substituted peanut butter for the oil, but I had to add more milk to get the right consistency. I would have liked a little more peanutty taste, but a good result, anyhow! I made these in an attempt to make the previous recipe healthier. Ingredients

    1 c. flour
    1/2 c. sugar
    1 T. baking powder
    Mix dry ingredients thoroughly. Then add:
    1 egg
    1/2 c. milk (I use 2%)
    1/4 c. Reduced Sugar Peanut Butter
    The batter will be a bit thick. I wound up adding about 1/4 c. more milk to achieve the right "pourable" consistency. Even so, the donuts came out much more dense than the previous recipes...but that's good, because they were much more filling!

    Note: I counted a single batch of 7 mini donuts to be one serving.

Directions

The times are pure estimation. I have a 2 1/2 year-old helping, so it takes me a lot longer to make anything than if I didn't have the help!
