Introduction
As a kid, I was always fascinated with the carrots made out of frosting that adorned the top of carrot cake. This version, made without eggs or dairy but with nutritious carrots, pumpkin, whole grains, and applesauce is reasonably healthy (for a dessert, that is) without sacrificing taste! Use your favourite icing, or just dust some powdered sugar over it. As a kid, I was always fascinated with the carrots made out of frosting that adorned the top of carrot cake.
