Introduction

This potato salad is simple and is much lower in fat than others. This potato salad is simple and is much lower in fat than others.
Number of Servings: 6

Ingredients

    1 pound of small red potatoes
    1 small celery stalk, diced
    1 egg white, boiled and diced
    1 tablespoon of Duke's Low Fat Mayonaise
    1 teaspoon of yellow mustard (to taste)
    Salt, Pepper, Garlic Salt (to taste)
    Splash of Dill Pickle Juice

Directions

Slice the potatoes into pieces that fit your preference. Boil until soft. Drain and put them in the refrigerator to cool. Dice one boiled egg white as well as one small celery stalk. Add celery, egg, mayonaise, and mustard to the potatoes and stir. Add salt, pepper, and garlic salt to taste. The secret is the splash of dill pickle juice. My grandmother taught me this and it always gives that extra flavor.
