Ingredients

    *Canola Oil, 2 tbsp
    *Cumin seed, 1 tsp
    *Russett Potato 3 medium
    *Carrott, Raw 3 Large
    Chili powder, 1 tsp
    *Coriander Seed, .33 tbsp
    *Ground tumeric, .25 tsp
    Salt, .25 tsp
    Lemon juice of Half a Lemon

Directions

Heat oil and add cumin seeds. When they crackle, add potatoes. Fry for 3-4 minutes and add carrots. Stir mixture and sprinkle with salt and spices. Stir fry mixture for 1-2 minutes and then cover and cook on low heat for 8-10 minutes. Sprinkle with a little water to help cook carrots. Sprinkle with lemon juice before serving.

Serving Size: Makes 6 3/4 cup servings.
