Introduction

Number of Servings: 6

Ingredients

    1 Bag Frozen Stir Fry Vegetables
    1/2 bag Frozen Mixed Pepper Mix
    1 cup frozen peas
    2 tsp oil (or cooking spray)
    1/2 red onion chopped
    5 green onions chopped
    6 eggs (beaten)

Directions

In cast iron skillet, add oil or cooking spray then heat to high. Add onions and stir until slightly browned. (Darkenss brings out the sweetness, so don't worry if it gets a little charred.) Reduce heat to medium and add all other veggies. Stir until veggies are hot, then add the beaten eggs. Cook for 2 more minutes (DO NOT stir after eggs have been added!) sprinkle with salt and pepper then put into a preheated 400 degree oven for 10 minutes. Remove from oven and let cool for 5 minutes. Slice into six wedges and enjoy! I love the addition of hot sauce or salsa afterward. Yummy by itself or next day in a lettuce wrap or sandwich.

Serving Size: Makes 6 wedges approx. 1 inch thick
