READ CAREFULLY: In order to get the correct calorie count, when calculating the ingredients in the recipe calculator, I had to add only what I actually used on the chicken during the making of the recipe. Half of the seasoning made was discarded after the "dipping" so I cut all the ingredients in half when using the recipe calculator. The 2 tbsp of milk I actually needed was listed in an original recipe as a 1/3 c of milk but after I was done, I noticed only 2 tbsp were used to coat the chicken so.... The complete original recipe is as follows:
1/3 c whole wheat flour
1/2 c oats
1/3 c parmesan
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cajun spice
1/2 tsp white pepper
shake of salt
1/3 c of milk used for dipping chicken in before coating
14 oz chicken breast cut into strips
Directions
Preheat oven to 400 degrees. Spray large cookie sheet with oil and set aside.
Combine all dry ingredients in a food processor or blender and blend until it makes a fine mixture.
Slice the chicken breast into strips. Pour milk into one large bowl and bread coating into another bowl. Add your chicken to the milk bowl and pull strips out individually and coat with breading in the separate bowl before placing on cookie sheet. Give a light spray of Pam over the breaded strips just before putting them in the oven for about 15 minutes.
Serving Size: Makes 4 (3-4 piece) servings of chicken stips
