Ingredients

    1 spaghetti squash
    1 can black beans
    1 can corn
    2-3 tomatoes, chopped
    1 bell pepper, chopped
    cilantro - about half a bushel

    dressing:
    2T lime juice
    2T balsamic vinegar
    1 T cumin
    salt and pepper to taste

Directions

Poke holes all around spaghetti squash, microwave on high for about 15 minutes, turning every 5. Cut in half, remove seeds, scrap out squash with a fork.

Combine squash, beans, corn, tomatoes, pepper and cilantro in bowl. In a separate bowl, disolve cumin in lime juice, then add balsamic vinegar. Pour over veggies and mix well. Serve warm or cold, makes 8 1-cup servings.

    Delicious! Very fresh tasting! We used a can of rotel instead of the tomato as that is what we had on hand. Will definitely make again. Thanks :) - 5/5/11

    Very good! The dressing on it is great too lot of flavor except only used tsp of cumin. Added chicken on top. Will def make again. Also added onion. YUM - 10/21/09

    This recipe "inspired" what I made - I based my dinner off of it. I omitted the beans, substituted salsa for the tomatoes, topped it with shredded cheese, and seasoned it with red pepper for some kick. It was good and very filling. - 1/30/08

    Incredible!
    This is great! I cooked the squash about 3 minutes too long. It wasn't quite as spaghetti-ish, but it still makes a great salad. I also didn't have green pepper or cilantro, but I diced some zucchini and added it. Will definitely make again. Thanks for sharing! - 8/16/14
