1 tbsp flour, white
1-1/2 cup fat free half and half
1 cup cooked winter squash, mashed
1/2 cup shredded cheddar cheese (made with 2% milk)
Directions
Melt butter and stir in flour.
Very gradually add tiny amounts of the half and half, stirring until smooth after each addition.
Keep stirring and add cheese, then squash and salt and pepper to taste.

I noticed that everyone is commenting about calores. I don't think that it's too bad. You could make a meal of it by adding a garden salad with low cal dressing, and you'd have a meal for less than 500 cals. I usually aim for less than 500 calories.
