Ingredients

    Ground Beef 93% Lean, 16 oz
    Onions, raw, 1 cup, chopped
    Carrots, raw, .5 cup, chopped
    Celery, raw, .5 cup, diced
    Wild Rice, 3 cup
    Yellow Peppers (bell peppers), 5 pepper, large (3-3/4" long, 3" dia)
    Wegmans Colby Jack Cheese, 7.5 oz
    Butter, salted, 1.5 tbsp

Directions

Cook and drain the beef. Melt butter in pan and add onion, carrots and celery. Cook until tender. Stir in rice and spices. Scoop into blanched bell pepper halves, top each with .75 oz of cheese. Place them all in an oven-safe pan and bake for 8-10 minutes at 350°.
