Whole Wheat Flour, 0.5 cup
Soy Milk, .5 cup
Egg, fresh, 3 large
Spinach, fresh, 2 cup (cooks down to 1 cup)
Apples, fresh, .25 cup, quartered or chopped
Caramelized red onion, 2 serving
I Can't Believe It's Not Butter, Regular Spread, or Veggie Oil, 3 Tbsp
Agave Nectar 1 tbsp
Salt, 2 tsp
Trader Joe’s Dutch Smoked Cheese Reduced Fat 2 oz
Nutmeg
Thyme
Directions
1. Mix flour, soy milk, eggs, nutmeg, agave, and salt together. Slice gouda cheese (ricotta or mild cheddar are great substitutes) and add.
2. Chop onions and 1 small apple into thin slices, toss into medium-sized cooking pan (medium-high heat) with 2 tbsp of butter or vegetable oil. Saute, sprinkle with salt, let the onions sweat a little and then add fresh thyme.
3. While onion mix is cooking, clean and chop spinach, toss into pan. Mix until spinach until wilted. Remove from pan into another container.
4. Re-oil or butter pan (make sure to get the sides!), pour in egg and cheese mix. Stir and cook for a minute.
5. Add spinach mixture and stir. Sprinkle with salt and pepper and then cover with pan top. Let it cook for 5 minutes or until everything is cooked.
6. Slice into 8 portions and serve.
