Ingredients

    3 boneless skinless chicken breasts
    Quick Cooking brown rice prepared with 1 cup chicken broth in place of 1 of the cups of water - enough for 6 servings
    1 10 ounce bag broccoli flowerettes
    1 can of cream of potato soup
    3/4 of the soup can low fat milk
    1 cup shredded cheddar cheese
    salt to taste
    ground pepper to taste
    garlic powder to taste
    Tony Chachere's Cajun spice to taste

Directions

Preheat oven to 350 degrees. Heat olive oil in pan over medium heat. Add chicken breasts. Sprinkle breasts with salt, pepper, garlic powder and Tony Chachere's. Brown both sides thoroughly. You can prepare your rice while cooking the chicken. Substitute 1 cup of water with chicken broth. Remove chicken from heat and dice into cubes. Mix chicken, rice, and all other ingredients together and place in a greased casserole dish. Bake for 30 minutes.
