Introduction

I love to take this to work for lunch. Everyone else is eating their cold meat sandwich or microwave dinner. To me this is comfort food. I love to take this to work for lunch. Everyone else is eating their cold meat sandwich or microwave dinner. To me this is comfort food.
Number of Servings: 9

Ingredients

    1 cup Brown Rice, long grain,
    1 cooked Chicken Breast diced, bone and skin removed
    1 cup Celery, raw, diced
    ¼ cup Peppers, sweet, red, fresh, , chopped
    ½ cup Mushrooms, fresh. pieces or slices
    1 Tbsp Cornstarch
    1 cube Chicken bouillon
    6 oz water

    Biscuit topping
    1 ½ cup Heart Smart Bisquick (mix only),
    ¾ cup Milk 1%,
    1 large Egg, fresh

Directions

Cook rice according to package directions.

Make chicken bouillon, add cornstarch and stir. Set to the side.

Mix Bisquick, milk and egg. Stir. It looks runny at first but does thicken up. Set to the side.

Add remaining ingredients to rice, bring to a boil and simmer. Add additional water as needed.

Spray ramekins with non-stick spray and place on a jelly roll pan.

Spoon soup into ramekins ¾ full. Top with bisquick batter. (It is still pourable)
