Introduction
Great bread alternative. Good for sandwiches, with soup or just alone hot with butter. I've subbed the almond flour with Carbquik and omitted the salt and baking powder. If you use Carbalose, still include the leavening agents.) You could also try soy flour, but do so at your own taste risk. Of course nutritional values change when using alternative ingredients. Ingredients

2/3 cups almond flour-or alternative
3 eggs - set one egg white aside
1/2 tsp salt
1/2 tsp baking powder
2 tsp xylitol
4 tbs olive oil
Directions
Beat 1 egg white in bowl until stiff, set aside.
Mix other ingredients in bowl, then fold the egg white in gently--don't over fold so you won't break the egg white. This will give them a little height.
Drop from tblsp on cookie sheet and spread outward into circles but not too thin, you want to get about 6 out of the batter. I use a tbsp and drop six of them, then add 1 tbsp to each equally until all the batter is gone. Bake at 350 until golden brown in preheated oven.
